Salted Caramel Meringue Tarts

Another amazing dessert to make soon!


image (12)Tarts are my new favourite treat to make. I used to be scared of making pastry as it seemed there are so many things that can go wrong, however this recipe is absolutely no-fail and I have never had an issue with it. These tarts look amazing and taste incredible with their salty sweet filling and subtle marshmallowy topping. They’ve been a hit with everyone who’s tried them and I’m now constanty getting requests to make more. Give them a go, they really are easy!

For the pastry:

150g plain flour

55g icing sugar (also called confectioners or powdered sugar)

90g cold butter, chopped into cubes

1 egg yolk

1 1/2 tablespoons cold water

For the caramel:

400g sweetened condensed milk

90g golden syrup or treacle

30g butter

2 teaspoons flaked or coarse sea salt

1/4 cup heavy cream

For the meringue:
